Florentine Elderflower Cordial 

The taste of early summer, kept in a bottle for the rest of the year.

Elderflowers bloom for only a few weeks, from late May into June. A good cordial holds that short season: the creamy blossoms are steeped in syrup with a squeeze of lemon, and the result is floral, fresh and lightly sweet, with a hint of citrus.

It’s a concentrate, so a bottle goes a long way. Dilute it with still or sparkling water for a long drink, or use it as a mixer: it pairs naturally with gin, and a dash lifts a glass of prosecco. It’s also non-alcoholic, which makes it a good option for drivers and anyone off the drink.

How to serve

• One part cordial to five or six parts chilled sparkling water, over ice, with a slice of lemon or cucumber
• With gin and soda for an elderflower Collins
• A splash topped up with prosecco or Champagne
• Drizzled over fruit salad, or stirred into whipped cream for desserts
