Pallini Limoncello 50cl

Amalfi lemons, a Roman family recipe, and the classic Italian way to end a meal.

The Pallini family has been making liqueurs since 1875, first in the hill town of Antrodoco and, from 1922, in Rome. Their limoncello is the one they are best known for in Italy, and it rests on one ingredient: the Sfusato Amalfitano, the large, spindle-shaped lemon grown on the terraced slopes of the Amalfi Coast.

The lemons are picked by hand and peeled soon after harvest, taking only the bright yellow zest and leaving the bitter white pith behind. The peel is steeped in neutral spirit to draw out its oils, then sweetened with Italian beet sugar. The result is a limoncello that tastes of fresh lemon rather than lemon sweets: zesty and bright, with sweetness and acidity in balance and a clean finish.

The 50cl bottle is a good size for trying it, for gifting, or for keeping in the freezer.

How to serve

• Ice-cold, straight from the freezer, in a small glass after dinner, as it’s drunk in Italy
• As a Limoncello Spritz: limoncello, prosecco and a splash of soda over ice with a lemon slice
• Poured over vanilla ice cream or lemon sorbet
